Harvest begins by hand in late September, as the team meticulously harvests only the best of the vineyards fruit typically amounting to only 10% of the vineyard yield. The grapes are placed in wooden boxes, and left to dry in controlled humidity until February of the following year. After pressing, the traditional maceration takes place over a period of more than three weeks,
